Introduction

In this dairy technology laboratory, students will gain a thorough understanding of the quality attributes of milk and milk products through a series of standard analytical procedures. The laboratory is designed to provide practical knowledge of quality evaluation techniques that are widely employed in the dairy industry for ensuring product safety, authenticity, and compliance with quality standards. Students will conduct experiments pertaining to the evaluation of physicochemical qualities, quality analysis of dairy products including butter, ghee, and ice cream, and the use of platform tests to assess the quality of raw milk. Through these studies, students will be able to comprehend the importance of important quality characteristics in assessing the nutritional value and processing compatibility of dairy products, such as fat content, solids-not-fat (SNF), and titratable acidity. Additionally, the lab focuses on detecting adulterants in milk and milk products, giving students an understanding of spotting typical adulterations that jeopardize food safety and quality. Students will gain analytical skills necessary for process control, quality assurance, and regulatory compliance in the dairy business through these experiments. Overall, this laboratory provides a strong foundation in dairy quality evaluation by integrating theoretical concepts with practical analytical techniques used in milk testing, quality control, and dairy product processing.

Objective

The dairy technology laboratory aims to:

  • Understand the principles and significance of platform tests for rapid assessment of raw milk quality.

  • Determine the titratable acidity, fat content and solids-not-fat (SNF) content of milk using standard analytical methods.

  • Assess the quality characteristics of butter & butter oil and overrun in ice-cream.

  • Detect common adulterants in milk and milk products using qualitative analytical methods.
